I was asked to do a tutorial on yogurt making

So here it is!

I use a yogurt maker, I figured it would be worth the small investment for the amount of yogurt we eat. I make at least one batch a day, many times I will make two. I am thinking of buying a larger maker, since my daughter has been off cow milk I have been using yogurt in all of my recipes calling for milk. She has no problem with yogurt, kefir or any cultured milk product, so this is what we have been using.

This is my yogurt maker, pretty simple, it keeps the temperature of the culturing milk low and consistent.


First measure out the amount of milk to fit whatever you are going to use to make your yogurt. If you are doing this without a “yogurt maker” make sure you culture your milk in a glass or plastic container. A quart canning jar works really well.

Pour the milk into a sauce pan and turn the stove on to medium heat. I use a candy thermometer, when I first started to make yogurt I just guessed at the temperatures, and I ruined a few batches before I broke down and just bought a thermometer.


Heat the milk to 180-200 degrees.

This is important, you are basically pasteurising the milk for a second time, since the conditions are ripe for culturing bacteria you only want to be culturing the yogurt bacteria…nothing else.

Keep a good eye on this, once milk starts to boil it boils over very quickly….I have done this many times…hehe….and you don’t want it to get too hot and burn. Burnt milk is really smelly and is almost impossible to get off a pan….yes, I have done that too….


See the small bubbles, the milk is at the right temperature, almost to a boil, but not quite there. I promise a thermometer makes the whole process a lot easier.

At this point take the pan off the hot burner and let it sit and cool to 120 degrees. If you don’t let the yogurt cool down enough you will kill the yogurt cultures. Usually I make yogurt when I am cleaning up dinner, so I just let it sit, it takes a while to cool down, if I am in a hurry I will set the pan in a sink full of cold water and then it only takes a few minutes.

When it has cooled to 120 degree pour a little off into a bowl and add your starter. You can buy dry yogurt starter at a health food store, or you can use plain cultured yogurt. For this batch I used a couple spoonfuls of my sweet yogurt cheese. Once you start making yogurt you can use leftovers from the previous batch…it is like a gift that keeps giving.

Whisk the yogurt starter in until well blended.

Then pour it into your pan of warm milk and give it a good stir

Then, once again, pour it back into the yogurt maker.

I you aren’t using a yogurt maker at this point you would pour the milk mixture into your jar and put the lid on. You can let it culture in an oven, turn the oven onto warm, when it is warmed up turn it off and set the jar inside, let it culture for several hours. Or you can wrap the warm jar in towels to keep it warm and let it culture. There is a heating pad method and a crock pot method, (I shared the links above.) There are many methods to culture yogurt.

Place it in the warmer

Put the lids on

And let it culture away.

It takes between 4 to 6 hours to get a good firm yogurt, I will start it and just let it go all night and in the morning this is what I am left with.


Now, homemade yogurt is runnier than yogurt bought at the store. Store bought yogurt sometimes has gelatin added or it had been strained to create a thicker, creamer yogurt. I use the runnier yogurt for recipes and smoothies, this is what we use yogurt for the very most. If I want it thicker I will strain it until I reach the desired thickness. Yogurt can be used as a substitute for sour cream and cream cheese, it is wonderful strained with a little honey whipped in or drizzled over the top.

I have make yogurt with whole mill, 2%, 1% skim and powdered milk, it is a great way to rotate your powdered milk.

I would also like to note that yogurt doesn’t always turn out, even with a yogurt maker, don’t be discouraged if your first attempt doesn’t work. Making yogurt is like baking bread, it is an art and it takes some time to figure it out. The benefits of making your own yogurt are well worth the effort. You have control over the quality of milk used and the ingredients added, you also avoid the sugars and food dyes used in commercial yogurts.

Sweet Sweet Cheese

Since we have decided to put our oldest on a no-sugar, no-milk diet cooking had become somewhat of a challenge. It hasn’t been as hard as I thought it would be, honey and agave nectar easily substitute for white sugar and yogurt for milk.

The hardest part is finding yummy, easy treats. Pretty much everything purchased at the store has corn syrup in it, which is a major no-no.

I found this recipe for a yummy dip/spread in my favorite cook book Nourishing Traditions. I love this book, they don’t use any sugar or artificial sweeteners in their recipes, they do use a lot of milk, but I find that kefir or yogurt easily substitute.

To make sweet cheese all you need is plain cultured yogurt (I make my own)
and honey.

Simple!


I set my wire mesh strainer on top of a glass measuring bowl.


and line the strainer with coffee filters


I then add the yogurt


The whey will start dripping into the bowl.

Cover with a light cloth and let it just sit on the counter top.

Homemade yogurt is runnier than store bought. Yogurt from the store has either been strained a bit or there have been chemicals added to make it firmer. Unless I am using my yogurt for smoothies I always strain it a bit.

The picture below shows the yogurt after about an hour and a half.

This is a great consistency for sour cream


after about three hours it is nice and thick, just let it strain until you like the consistency.

Sometimes I will let it strain all night and it makes a nice cream cheese.

This batch gave me about 3 cups of whey, I save it in a jar in the fridge to use when soaking grains.


I then put the cheese into a bowl and add honey


With beaters I mix the honey in until it is smooth, adding more honey until I get the desired flavor

We used it on french toast with strawberry sauce over the top, it can also be used as a yummy and nutritious fruit dip, or add some fruit for a yummy yogurt breakfast, also good with granola, the possibilities are limitless.

Cup ‘o Tea

Around these parts we had a very wet cold June, I think it was the wettest and coldest on record. (Global Warming?) Because it was so cold and wet there were many cool weather crops that got an extended growing season and some of our warmer weather plants had a chance to grow big and tall before they began to produce. Things like Melons and winter squash will be in short supply this year, they really can’t take a season shortened by four weeks, I am hoping the fall will be warmer than normal.


Because of this it looks like we are going to have a bumper crop of Chamomile this year, and not wanting to lose any or buy any this winter I set the children to work picking the flowers.

Since picking flowers is generally frowned upon at my house, they think it is fun to pop the blossoms off the plants.


I am going to dry these little babies and save them for cold winter afternoons. I seep a weak Chamomile tea, add warm milk, honey and the kids love it! It is a great way to warm the belly after an afternoon in the snow.

Spinach and Citrus Salad

The last and final Salad in our series.
Spinach Citrus Salad
it is a goody.

For the Dressing you will need:

2 Tbsp Orange Juice
1 Tbsp Apple Cider Vinegar
2 Tbsp Olive Oil
1 tsp mustard
Salt and Pepper to taste


Mix all the ingredients together and whisk well.

Then add 1 can mandarin oranges (drained)
and 1/4 (or less) red onion sliced thin

Add to spinach

Toss with the dressing
and you have a yummy, light salad.

I served it with some grilled chicken on the side.
A yummy summer salad.

Chicken Salad

It seems like there are as many recipes for chicken salad as there are for potato salad, every family seems to have one they love and use all the time.

This is “our” recipe for chicken salad, it is very simple, very fattening, and super good.

Momzoo’s Chicken Salad:
2 cups chicken cooked and chopped

1 cup Mayo
2 Tbsp lemon juice
1/2 tsp salt
2 cup chopped celery
1 cup crushed potato chip
1 1/2 cup shredded cheddar cheese


Mix the Mayo, salt and lemon juice.

Add Chicken and Celery

Mix well

Right before serving add the potato chips and cheese, stir well.

Serve on a croissant.

Enjoy, and try not to think of all the fat and calories…..
